Crock Pot Cajun Ribs Recipe

2c carrots
1large onion, chopped
1large green bell pepper, cut into pieces
1large red bell pepper, cut into pieces
2tsp minced garlic
2tbsp Cajun seasoning
4 lbs  pork country-style ribs
1can (14-1/2 ounces) stewed tomatoes, undrained
2tbsp water
1tbsp cornstarch


Place carrots, onion, bell peppers, garlic and 2 teaspoons Cajun seasoning in slow cooker; mix well.  Cut meat into individual ribs. Sprinkle 1 tablespoon Cajun seasoning over ribs; place in slow cooker over vegetables. Pour tomatoes  over ribs. Cover; cook on LOW 7 hours or until ribs are tender. Remove ribs and vegetables from cooking liquid to serving platter. Remove fat. Mix water, cornstarch and 1 teaspoon Cajun seasoning. Stir into slow cooker. Cook on HIGH until sauce is thickened. Return ribs and vegetables to sauce and stir. Serves 6.
