Crock Pot Coq Au Vin Recipe
5 slices uncooked bacon, diced
2/3 c. sliced green onions
6 chicken breast halves
6 small white onions, peeled
1/2 lb. mushrooms
1 clove garlic, crushed
1 tsp salt
1/4 tsp pepper
1/2 tsp dried thyme
1/2 c chicken broth
1/2 c burgundy
Heat a large skillet over medium-high heat. Add the bacon and green onions and cook until the bacon is crisp; drain. Brown chicken well in skillet; remove. Layer the onion, mushroom and garlic in a crockpot. Add the chicken, bacon misture, salt, pepper, thyme and chicken broth. Cook on low for 6 hours. Add the wine in the last hour of cooking. Serves 6.
