Crock Pot Mashed Potatoes

10 potatoes, peeled and sliced
1/3 c margarine
1 pkg cream cheese
1 c sour cream
2 eggs separated
1/2 tsp pepper
1/4 c bread crumbs


Cook potatoes until tender. Drain & return to pan. Combine 1/4 of the margarine, all of the cream cheese, sour cream, egg yolks, salt, pepper. Mash potatoes on low until smooth. In a bowl, beat egg whites until stiff. Put into potato mix. Put into Crock Pot. In a bowl, mix 2 tbsp of the margarine & bread crumbs, mix well and put on potatoes. Cook on High for 3 hours & top browns.  Will have a light texture. Serves 6.
