Crock Pot Potato and Onion Soup Recipe
5 cups cubed, peeled potatoes
5 cups water
2 cups finely chopped onions
1 cup chopped celery
1 cup sliced carrots
1/4 cup butter or margarine
4 tsp. chicken bouillon granules
2 tsp. salt
1/4 tsp. pepper
1 - 12 oz. can evaporated milk
3 tablespoons chopped fresh parsley
4 tablespoons chives
In a large crock pot, mix the first 9 ingredients. Cover and cook on High for 8 hours or until vegetables are cooked. Add milk, parsley and chives, mixing well. Cover crock pot and cook 30 minutes longer to heat through. Makes approximately 8 - one cup servings.
Easy Crock Pot Beef and Bean Chili
2 lbs beef stew meat or round steak
2 - 14.5 oz cans diced tomatoes
1 large onion, chopped
1 large green pepper, cut into 1 inch pieces
1 - 6 oz can tomato paste
1 - 4.5 oz jar chopped green chilies, drained
3 cloves garlic, minced
3 tablespoons chili powder
1 teaspoon dried Italian seasoning
2 teaspoons ground cumin
1 teaspoon salt
2 - 15.25 oz cans kidney beans, drained
In your crock pot, mix beef, tomatoes, onion, green pepper, tomato paste, chilies, garlic, chili powder, Italian seasoning, cumin & salt. Cover; cook on low for 8-10 hours. Add beans, cover crock pot and cook for about 15 minutes longer.
Crock Pot Vegetable Soup Like Grandma's
2 lb. soup bone
2 quart water
1 tsp. salt
1 tsp. celery salt
1 small onion, chopped
1 cup carrots, diced
1/2 cup celery, diced
2 cups potatoes, diced
1 lb. can whole kernel corn, undrained
1 lb. can tomatoes or home canned, cut up
2 turnips, peeled and finely chopped
In your crock pot, put meat, water, salt, celery salt, onion, carrot and celery. Cover and cook on low for 6 hours. Nest, add potatoes, corn, tomatoes and turnips. Cover crock pot and cook on high for 2-3 hours more. Serves 10-12 hungry people. This is perfect with warm, crusty bread with butter.
